Bacon-Apple Turkey Burgers
Arugula-Mint Salad
Ingredients
- 1 slice bacon
- ¼ cup finely chopped onion
- ½ small red apple, finely chopped (or shredded)
- ¼ tsp garlic salt
- ⅛ tsp pepper
- 1 (20-oz) pkg ground turkey
- 1 egg yolk
- 2 hamburger buns (preferably whole wheat)
Instructions
- Cook bacon in a nonstick skillet over medium-high heat until crisp; drain, reserving drippings in skillet. Crumble bacon.
- Sauté onion, apple, garlic salt, and pepper in hot drippings until apple is soft; remove from heat, and cool.
- Preheat grill to medium-high heat. Combine turkey, egg yolk, onion mixture, and bacon in a bowl; shape into 4 or 5 patties.
- Grill patties, covered, 5 to 6 minutes per side or until done. Serve 2 patties on buns with desired toppings. Reserve remaining 2 to 3 burgers for another meal.
Side Dish Ingredients
- 2 cups arugula
- ¼ cup pecans, toasted and chopped
- 2 Tbsp fresh mint leaves
- 2 Tbsp thinly sliced red onion
- 3 Tbsp balsamic vinaigrette
- ½ cup blueberries
- ¼ cup crumbled reduced-fat feta cheese
Side Dish Instructions
- Place arugula, nuts, mint, and onion in a bowl; toss with vinaigrette. Season with salt and pepper to taste. Sprinkle with berries and cheese.
