Spinach-Apple Turkey Burgers

Ingredients

  • 2 Tbsp olive oil, divided
  • ½ cup diced red onion
  • 1 small apple, finely chopped
  • 1 (9-oz) pkg baby spinach
  • ½ tsp dried sage
  • ¾ tsp garlic salt
  • ½ tsp pepper
  • 1 (20-oz) pkg ground turkey
  • 2 Tbsp coarse-grain Dijon mustard
  • 6 whole-grain hamburger buns
  • 6 lettuce leaves
  • 6 thin slices tomato
  • 12 cucumber slices

Instructions

  1. Heat 1 Tbsp oil in a large nonstick skillet over medium-high heat.
  2. Cook onion, apple, spinach, sage, garlic salt and pepper in hot oil 7 minutes or until apple is soft and liquid is evaporated; remove from heat.
  3. Wipe skillet clean with a paper towel.
  4. Combine ground turkey and apple mixture in a bowl; shape mixture into 6 (½-inch thick) patties.
  5. Heat 1 Tbsp oil in skillet over medium-high heat; add patties, and cook 5 to 6 minutes per side or until done.
  6. Spread 1 tsp mustard on one side of each hamburger bun.
  7. Place lettuce, tomato, cucumber and patties on buns.

Side Dish Ingredients

  • 4 cups carrot sticks

Side Dish Instructions

  1. Serve alongside burgers.
