Pork with Rosemary Yogurt Aïoli
Skillet Zucchini and Yellow Squash
Ingredients
- 6 (4-oz) boneless pork loin chops
- 1½ Tbsp canola oil
- 1½ tsp dried oregano
- ¾ tsp salt, divided
- ½ cup fat-free plain Greek yogurt
- ¼ cup reduced-fat mayonnaise
- ¾ tsp dried rosemary
- ¾ tsp yellow mustard
Instructions
- Preheat grill to medium-high heat.
- Brush both sides pork chops with oil; sprinkle with oregano and ¼ tsp salt.
- Grill pork, covered with grill lid, 4 minutes on each side or until done.
- Stir together yogurt, mayonnaise, rosemary, mustard and ½ tsp salt.
- Spoon yogurt mixture evenly over pork chops.
Side Dish Ingredients
- 3 Tbsp canola oil
- 1 lb sliced zucchini
- 1 lb sliced yellow squash
- 1 large red bell pepper, chopped
- 1 cup chopped onion
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Heat oil in a large nonstick skillet over medium-high heat.
- Add zucchini, yellow squash, bell pepper and onion.
- Cook 6 to 8 minutes or until crisp-tender; stir in salt and pepper.
