Pork with Rosemary Yogurt Aïoli

Ingredients

  • 6 (4-oz) boneless pork loin chops
  • 1½ Tbsp canola oil
  • 1½ tsp dried oregano
  • ¾ tsp salt, divided
  • ½ cup fat-free plain Greek yogurt
  • ¼ cup reduced-fat mayonnaise
  • ¾ tsp dried rosemary
  • ¾ tsp yellow mustard

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush both sides pork chops with oil; sprinkle with oregano and ¼ tsp salt.
  3. Grill pork, covered with grill lid, 4 minutes on each side or until done.
  4. Stir together yogurt, mayonnaise, rosemary, mustard and ½ tsp salt.
  5. Spoon yogurt mixture evenly over pork chops.

Side Dish Ingredients

  • 3 Tbsp canola oil
  • 1 lb sliced zucchini
  • 1 lb sliced yellow squash
  • 1 large red bell pepper, chopped
  • 1 cup chopped onion
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add zucchini, yellow squash, bell pepper and onion.
  3. Cook 6 to 8 minutes or until crisp-tender; stir in salt and pepper.
