Quick Rice and Broccoli with Baby Carrots

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut into chunks
  • ½ tsp salt
  • ½ cup cornstarch
  • 2 large eggs
  • 1 cup buttermilk
  • 1½ cups panko breadcrumbs
  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • 1 Tbsp honey

Instructions

  1. Preheat oven to 450°F; place a large rimmed baking sheet in the oven while it preheats.
  2. Sprinkle chicken with salt.
  3. Place cornstarch in a shallow bowl; whisk together eggs and buttermilk in a second shallow bowl. Place panko in a third shallow bowl.
  4. Dredge chicken in cornstarch; dip in egg mixture, and dredge in panko, pressing gently to adhere.
  5. Place chicken on preheated baking sheet; spray chicken with cooking spray. Bake 15 minutes or until browned and crisp.
  6. Stir together mayonnaise, chili sauce, and honey; drizzle sauce over chicken. Serve over rice.

  • 1 (12-oz) pkg broccoli florets
  • ½ (16-oz) pkg baby carrots, halved lengthwise
  • 1½ Tbsp butter
  • ½ tsp salt
  • 2 (8.5-oz) pouches microwavable jasmine rice (or use basmati)

Side Dish Instructions

  1. Steam broccoli and carrots in a steamer basket over boiling water until tender.
  2. Toss vegetables with butter and salt in a bowl.
  3. Cook rice according to package directions.
