Bang Bang Chicken
Quick Rice and Broccoli with Baby Carrots
Ingredients
- 1½ lb boneless, skinless chicken breasts, cut into chunks
- ½ tsp salt
- ½ cup cornstarch
- 2 large eggs
- 1 cup buttermilk
- 1½ cups panko breadcrumbs
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- 1 Tbsp honey
Instructions
- Preheat oven to 450°F; place a large rimmed baking sheet in the oven while it preheats.
- Sprinkle chicken with salt.
- Place cornstarch in a shallow bowl; whisk together eggs and buttermilk in a second shallow bowl. Place panko in a third shallow bowl.
- Dredge chicken in cornstarch; dip in egg mixture, and dredge in panko, pressing gently to adhere.
- Place chicken on preheated baking sheet; spray chicken with cooking spray. Bake 15 minutes or until browned and crisp.
- Stir together mayonnaise, chili sauce, and honey; drizzle sauce over chicken. Serve over rice.
Side Dish Ingredients
- 1 (12-oz) pkg broccoli florets
- ½ (16-oz) pkg baby carrots, halved lengthwise
- 1½ Tbsp butter
- ½ tsp salt
- 2 (8.5-oz) pouches microwavable jasmine rice (or use basmati)
Side Dish Instructions
- Steam broccoli and carrots in a steamer basket over boiling water until tender.
- Toss vegetables with butter and salt in a bowl.
- Cook rice according to package directions.
