Steak with Creamy Basil Dressing
Warm Plums with Mint
Ingredients
- 2 beef tenderloin steaks
- 2½ Tbsp extra virgin olive oil, divided
- ½ tsp kosher salt
- ¼ tsp ground cumin
- ⅛ tsp cayenne pepper
- ½ cup fresh basil leaves
- 1 clove garlic
- ¼ cup 2% reduced-fat plain Greek yogurt
- 1 Tbsp fresh lemon juice
Instructions
- Preheat grill to medium-high heat. Rub steaks with 1½ tsp oil. Stir together salt, cumin, and cayenne pepper; sprinkle over steaks.
- Grill steaks, covered, 4 to 5 minutes per side or to desired doneness. Let stand 5 minutes.
- Process basil, garlic, yogurt, lemon juice, and 2 Tbsp oil in a food processor until smooth. Stir desired amount of water into yogurt mixture, 1 Tbsp at a time, to desired consistency. Serve steaks with yogurt sauce.
Side Dish Ingredients
- 2 plums, cut in half
- 1 red onion, cut into ¼-inch slices
- 2 tsp olive oil
- 2 tsp honey
- 1 tsp balsamic vinegar
- ¼ cup crumbled goat cheese
- 1 Tbsp chopped fresh mint
Side Dish Instructions
- Preheat grill to medium-high heat. Brush plums and onion with oil and honey.
- Grill onions, covered, 4 minutes per side; grill plums, cut sides down, 2 minutes.
- Arrange plums and onions on a platter; drizzle with vinegar. Top with cheese and mint.
