Steak with Creamy Basil Dressing

Ingredients

  • 2 beef tenderloin steaks
  • 2½ Tbsp extra virgin olive oil, divided
  • ½ tsp kosher salt
  • ¼ tsp ground cumin
  • ⅛ tsp cayenne pepper
  • ½ cup fresh basil leaves
  • 1 clove garlic
  • ¼ cup 2% reduced-fat plain Greek yogurt
  • 1 Tbsp fresh lemon juice

Instructions

  1. Preheat grill to medium-high heat. Rub steaks with 1½ tsp oil. Stir together salt, cumin, and cayenne pepper; sprinkle over steaks.
  2. Grill steaks, covered, 4 to 5 minutes per side or to desired doneness. Let stand 5 minutes.
  3. Process basil, garlic, yogurt, lemon juice, and 2 Tbsp oil in a food processor until smooth. Stir desired amount of water into yogurt mixture, 1 Tbsp at a time, to desired consistency. Serve steaks with yogurt sauce.

Side Dish Ingredients

  • 2 plums, cut in half
  • 1 red onion, cut into ¼-inch slices
  • 2 tsp olive oil
  • 2 tsp honey
  • 1 tsp balsamic vinegar
  • ¼ cup crumbled goat cheese
  • 1 Tbsp chopped fresh mint

Side Dish Instructions

  1. Preheat grill to medium-high heat. Brush plums and onion with oil and honey.
  2. Grill onions, covered, 4 minutes per side; grill plums, cut sides down, 2 minutes.
  3. Arrange plums and onions on a platter; drizzle with vinegar. Top with cheese and mint.
