Sloppy Joe Mac and Cheese

Ingredients

  • ½ lb ground beef
  • ½ cup chopped onion
  • ½ cup chopped green bell pepper
  • 2 cloves garlic, minced
  • 1 (14.5-oz) can petite-diced tomatoes
  • 1 cup milk
  • 1 cup beef broth
  • ½ Tbsp Worcestershire sauce
  • ½ Tbsp Dijon mustard
  • ½ (7-oz) pkg elbow macaroni
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Cook beef, onion, bell pepper, and garlic in a skillet over medium-high heat until beef is browned and crumbly; drain and return to skillet.
  2. Stir in tomatoes, milk, broth, Worcestershire, and Dijon. Bring to a boil. Stir in uncooked macaroni; reduce heat, and simmer, covered, 12 to 15 minutes or until pasta is tender. Stir in ½ cup cheese until melted. Sprinkle with ½ cup cheese; let stand until melted.

  • 1 (12-oz) pkg frozen green beans
  • 1 Tbsp butter
  • 1 clove garlic, thinly sliced

Side Dish Instructions

  1. Cook beans according to package directions; drain, if needed.
  2. Melt butter in a large skillet over medium heat; add garlic, and sauté 30 seconds. Add beans, and season with salt and pepper to taste. Cook 2 minutes, stirring constantly.
