Sausage and Egg Breakfast Nachos
Strawberry-Melon Toss
Ingredients
- 1 lb ground sausage
- 1 green bell pepper, chopped
- 1 cup chopped onion
- 1 Tbsp butter
- 6 large eggs, beaten
- 1 (11-oz) pkg tortilla chips
- 1 (8-oz) pkg shredded Cheddar cheese
- 2 Roma tomatoes, chopped
- 2 avocados, chopped
Instructions
- Preheat oven to 350°F. Cook sausage, bell pepper, and onion in a large skillet over medium heat until sausage is browned and crumbly; drain. Remove from skillet.
- Melt butter in skillet over medium heat; add eggs, and cook, stirring occasionally, just until set.
- Arrange chips in a single layer on a lightly greased foil-lined baking sheet; top with sausage mixture, 1 cup cheese, eggs, and 1 cup cheese.
- Bake 5 minutes or until cheese is melted. Top with tomatoes and avocado; serve immediately.
Side Dish Ingredients
- 1 (16-oz) pkg strawberries, sliced
- 1 cantaloupe, chopped
- 1 Tbsp fresh lemon juice
- 1 Tbsp honey
Side Dish Instructions
- Toss together all ingredients in a bowl. Chill until ready to serve.
