Sausage and Egg Breakfast Nachos

Ingredients

  • 1 lb ground sausage
  • 1 green bell pepper, chopped
  • 1 cup chopped onion
  • 1 Tbsp butter
  • 6 large eggs, beaten
  • 1 (11-oz) pkg tortilla chips
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 2 Roma tomatoes, chopped
  • 2 avocados, chopped

Instructions

  1. Preheat oven to 350°F. Cook sausage, bell pepper, and onion in a large skillet over medium heat until sausage is browned and crumbly; drain. Remove from skillet.
  2. Melt butter in skillet over medium heat; add eggs, and cook, stirring occasionally, just until set.
  3. Arrange chips in a single layer on a lightly greased foil-lined baking sheet; top with sausage mixture, 1 cup cheese, eggs, and 1 cup cheese.
  4. Bake 5 minutes or until cheese is melted. Top with tomatoes and avocado; serve immediately.

Side Dish Ingredients

  • 1 (16-oz) pkg strawberries, sliced
  • 1 cantaloupe, chopped
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp honey

Side Dish Instructions

  1. Toss together all ingredients in a bowl. Chill until ready to serve.
