Spring Salad with Apple

Ingredients

  • 1 (16-oz) pkg sliced bacon, chopped
  • 1 (10-oz) pkg spinach
  • 2 cloves garlic, minced
  • 1 (13.8-oz) can refrigerated pizza dough
  • 2 Tbsp cornmeal
  • 1 cup pizza sauce
  • 4 Roma tomatoes, thinly sliced (see Note)
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Preheat oven to 450°F. Cook bacon in a large skillet over medium heat until crisp; drain, reserving 2 Tbsp drippings in skillet.
  2. Gradually add spinach to skillet, cooking over medium heat until wilted. Add garlic; cook 30 seconds.
  3. Unroll pizza dough, and press onto a pizza pan sprinkled with cornmeal. Spread pizza sauce over dough; top with spinach mixture, tomatoes, and bacon. Sprinkle with cheese.
  4. Bake 15 to 20 minutes or until cheese is melted and crust is golden brown.

Side Dish Ingredients

  • 3 Tbsp olive oil
  • 2 Tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 (12-oz) pkg classic salad mix
  • 1 apple, thinly sliced (preferably a sweet, crisp variety)

Side Dish Instructions

  1. Whisk together oil, vinegar, mustard, and desired amount of salt and pepper in a large bowl. Add salad and apple; toss.
