Summer Gazpacho
Shrimp, Feta, and Basil RelishIngredients
- 1 English cucumber, cut into chunks
- 2 bell peppers (any colors), cut into chunks
- 3 large tomatoes, quartered
- 1 red onion, cut into wedges
- 4 cloves garlic, minced
- 4 cups tomato juice
- ¼ cup white wine vinegar
- ¼ cup olive oil
Instructions
- Process first 5 ingredients in a food processor or blender until coarsely chopped (do not puree). Pour into a large bowl or pitcher.
- Stir in juice, vinegar, and oil; season with salt and pepper to taste. Divide among 6 bowls.
Side Dish Ingredients
- 1 lb peeled and deveined, large cooked shrimp
- 1 (1-oz) pkg fresh basil, thinly sliced
- 1 pint grape tomatoes, halved
- ½ cup crumbled feta cheese
- 2 Tbsp olive oil
Side Dish Instructions
- Toss together all ingredients in a bowl; season with salt and pepper to taste.
