Ingredients

  • 1 English cucumber, cut into chunks
  • 2 bell peppers (any colors), cut into chunks
  • 3 large tomatoes, quartered
  • 1 red onion, cut into wedges
  • 4 cloves garlic, minced
  • 4 cups tomato juice
  • ¼ cup white wine vinegar
  • ¼ cup olive oil

Instructions

  1. Process first 5 ingredients in a food processor or blender until coarsely chopped (do not puree). Pour into a large bowl or pitcher.
  2. Stir in juice, vinegar, and oil; season with salt and pepper to taste. Divide among 6 bowls.

Side Dish Ingredients

  • 1 lb peeled and deveined, large cooked shrimp
  • 1 (1-oz) pkg fresh basil, thinly sliced
  • 1 pint grape tomatoes, halved
  • ½ cup crumbled feta cheese
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Toss together all ingredients in a bowl; season with salt and pepper to taste.
