Molasses Chicken Breasts with Strawberry-Peach Salsa

Ingredients

  • 1 cup unsulphured molasses
  • ½ cup apple cider vinegar
  • 2 Tbsp raw honey
  • 3 cloves garlic, minced
  • 1½ lb boneless, skinless chicken breasts, halved lengthwise
  • 2 cups chopped strawberries
  • 2 peaches, peeled and chopped
  • 1 jalapeño pepper, minced
  • 2 Tbsp lime juice

Instructions

  1. Combine first 4 ingredients in a large zip-top plastic freezer bag; add chicken, turning to coat. Chill 30 minutes.
  2. Preheat grill to medium-high heat. Remove chicken from marinade, and sprinkle lightly with salt and pepper. Discard marinade.
  3. Grill on an oil-rubbed grill rack, covered, 12 to 15 minutes, turning occasionally, or until chicken is done.
  4. Combine strawberries, peaches, jalapeño, and lime juice. Serve salsa over chicken.

Side Dish Ingredients

  • 1 large head red cabbage, cut into 6 wedges
  • 1 Tbsp avocado oil
  • ½ cup avocado-oil mayonnaise (or use a homemade Paleo mayonnaise)
  • ¼ cup apple cider vinegar
  • 2 to 3 Tbsp water
  • 1 Tbsp raw honey
  • 1 green onion, chopped

Side Dish Instructions

  1. Preheat grill to medium-high heat. Brush cabbage with oil; sprinkle lightly with salt and pepper. Grill on an oil-rubbed rack, covered, 12 minutes or until slightly charred, turning occasionally.
  2. Combine mayonnaise, vinegar, water, and honey; season with salt and pepper to taste. Drizzle dressing over cabbage; sprinkle with onion.
