Grilled Chicken with Fresh Corn Relish

Ingredients

  • 4 Tbsp olive oil, divided
  • 2 Tbsp honey
  • ½ tsp garlic powder
  • 2 lb boneless, skinless chicken breasts
  • 6 ears corn, shucked
  • ½ cup chopped fresh basil
  • 1 jalapeño pepper, seeded and minced
  • 1 Tbsp lemon zest

Instructions

  1. Preheat grill or grill pan to medium-high heat. Stir together 2 Tbsp oil, honey, and garlic powder. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper. Rub honey mixture over chicken.
  2. Season corn lightly with salt and pepper. Wrap corn in foil, twisting ends to seal.
  3. Grill corn, covered, turning occasionally, 12 minutes. Grill chicken, covered, 5 to 6 minutes per side or until done.
  4. Cut kernels from cobs; discard cobs. Toss together corn, basil, jalapeño pepper, lemon zest, and 2 Tbsp oil. Spoon corn mixture over chicken.

  • 2 (12-oz) pkg frozen green beans
  • 2 Tbsp butter
  • 3 cloves garlic, thinly sliced

Side Dish Instructions

  1. Cook beans according to package directions; drain, if needed.
  2. Melt butter in a large skillet over medium heat; add garlic, and sauté 30 seconds. Add beans, and cook 2 minutes, stirring constantly. Season with salt and pepper to taste.
