Herbed Tuna Cakes with Mixed Greens

Ingredients

  • 2 (12-oz) cans tuna, drained and flaked
  • 1 (24-oz) pkg refrigerated sour cream and chive mashed potatoes
  • 1 cup panko breadcrumbs
  • 3 Tbsp chopped fresh dill
  • 4 Tbsp olive oil
  • 1 (6-oz) pkg mixed greens
  • ½ (12-oz) bottle balsamic dressing

Instructions

  1. Combine tuna, potatoes, panko, and dill in a large bowl; season lightly with salt and pepper. Shape mixture into 12 patties.
  2. Cook patties, in batches, in 2 Tbsp hot oil per batch in a large nonstick skillet over medium-high heat until browned and crisp.
  3. Divide patties among 6 plates. Toss mixed greens with desired amount of dressing. Serve with patties.

  • 1 lb asparagus, trimmed
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together asparagus and oil on a rimmed baking sheet. Bake 10 minutes or until crisp-tender; season with salt and pepper to taste.
