Double Cheeseburgers with Fried Eggs
Easy Potato SaladIngredients
- 1½ lb ground beef chuck (80% lean)
- ¼ cup finely snipped fresh Italian parsley
- ½ tsp salt
- ¼ tsp black pepper
- 2 Tbsp unsalted butter, melted and cooled to room temperature
- 4 oz mozzarella or smoked mozzarella cheese, coarsely shredded
- 1 Tbsp extra virgin olive oil (optional)
- 4 eggs (optional)
- 4 hamburger buns
- Bacon-or garlic-flavored mayonnaise
- Fresh basil leaves or spinach leaves
Instructions
- Preheat charcoal or gas grill to medium. In a large bowl gently mix beef, parsley, butter, ½ tsp salt and ¼ tsp pepper. Form into eight ¼-inch-thick patties.
- If desired, pour oil into large skillet fitted with lid over medium. When it shimmers, crack each egg into a small bowl; tip each into pan.
- Sprinkle lightly with additional salt and pepper; cover. Cook eggs until desired doneness; transfer to a plate.
- Cover and grill patties directly over heat 6 minutes, turning once and topping with cheese the last minute.
- To serve, spread 2 Tbsp mayonnaise on cut sides of buns, if desired. Stack two patties on a bun bottom. Top with fried egg, if desired, basil leaves, and bun top.
Side Dish Ingredients
- 3 medium white, red, or Yukon gold potatoes (1 lb), rinsed and scrubbed but not peeled
- ½ cup light sour cream
- 2 Tbsp bottled vinaigrette
- 2 hard-cooked eggs, chopped
- ½ cup chopped celery
- ⅓ cup chopped sweet onion
Side Dish Instructions
- In a medium saucepan place unpeeled potatoes in enough water to cover. Bring to boiling; reduce heat. Simmer, covered, 20 to 25 minutes or just until tender. Drain well; cool slightly. Cut potatoes into 1-inch cubes.
- In medium bowl whisk together sour cream and vinaigrette. Fold in eggs, sour cream, celery, and onion. Add the potatoes. Toss lightly to coat. Refrigerate leftovers.
