Skillet Chicken, Broccoli, and Rice
S'mores BrowniesIngredients
- 2 lb boneless, skinless chicken breasts, cut into ½-inch pieces
- ½ cup finely chopped onion
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 1 cup long-grain white rice
- 3 cups chicken broth
- 1 head broccoli, cut into small florets
- 1 (8-oz) pkg shredded Cheddar cheese, divided
Instructions
- Cook chicken, onion, and garlic in hot oil in a large, deep skillet over medium heat until chicken is done.
- Add rice; cook, stirring constantly, 2 minutes. Add broth; bring to a boil, cover, reduce heat, and simmer 10 minutes.
- Add broccoli; cover and cook 10 minutes or until rice and broccoli are tender. Stir in 1½ cups cheese until melted. Sprinkle with ½ cup cheese. Season with salt and pepper to taste.

- ½ cup plus 4 Tbsp butter, divided
- 1½ cups graham cracker crumbs
- ½ cup milk chocolate chips
- 1¼ cups sugar
- ¼ cup unsweetened baking cocoa
- 1 tsp vanilla extract
- 2 large eggs
- ¾ cup all-purpose flour
- ⅓ cup milk
- 1 (10-oz) pkg miniature marshmallows
Side Dish Instructions
- Preheat oven to 350°F. Microwave 4 Tbsp butter in a microwave-safe dish at HIGH until melted, stirring at 20-second intervals.
- Stir together graham cracker crumbs and melted butter. Press in bottom of a greased 9-inch pan.
- Microwave ½ cup butter and chocolate in a microwave-safe bowl at HIGH until melted and smooth. Cool. Whisk chocolate mixture, sugar, cocoa, and vanilla until blended. Whisk in eggs.
- Stir in flour and milk just until blended. Pour over crust in pan.
- Bake 25 minutes or until center is set. Remove from oven.
- Preheat broiler. Top brownies with marshmallows. Broil 30 seconds or just until golden. Cool brownies slightly. When almost completely cool, cut brownies into squares.
