Shrimp Salad Rolls

Ingredients
- 1½ lb peeled and deveined shrimp
- ⅓ cup olive-oil mayonnaise
- ¼ cup plain Greek yogurt
- 2 Tbsp lemon juice
- ½ cup chopped celery
- ½ tsp salt
- ½ tsp pepper
- 6 hoagie rolls
- 3 Tbsp butter, softened
- 1½ cups shredded iceberg lettuce (optional)
Instructions
- Cook shrimp in a large pot of boiling water 3 to 5 minutes or just until shrimp turn pink; drain and cool. Coarsely chop shrimp.
- Combine shrimp, mayonnaise, yogurt, lemon juice, celery, salt, and pepper in a bowl; chill until ready to serve.
- Cut a slit into center of each hoagie roll; brush cut sides with butter.
- Toast rolls, cut sides down, in a large skillet over medium-high heat 2 minutes.
- Fill each hoagie roll with shrimp salad; top with shredded lettuce, if desired.
Side Dish Ingredients
- 2 large apples, chopped
- 2 cups seedless red grapes
- 1 cup mini marshmallows
- ½ cup chopped pecans (or use other favorite nuts)
- ¼ cup balsamic vinaigrette

- Toss together all ingredients in a bowl.
