Shrimp Salad Rolls

Ingredients

  • 1½ lb peeled and deveined shrimp
  • ⅓ cup olive-oil mayonnaise
  • ¼ cup plain Greek yogurt
  • 2 Tbsp lemon juice
  • ½ cup chopped celery
  • ½ tsp salt
  • ½ tsp pepper
  • 6 hoagie rolls
  • 3 Tbsp butter, softened
  • 1½ cups shredded iceberg lettuce (optional)

Instructions

  1. Cook shrimp in a large pot of boiling water 3 to 5 minutes or just until shrimp turn pink; drain and cool. Coarsely chop shrimp.
  2. Combine shrimp, mayonnaise, yogurt, lemon juice, celery, salt, and pepper in a bowl; chill until ready to serve.
  3. Cut a slit into center of each hoagie roll; brush cut sides with butter.
  4. Toast rolls, cut sides down, in a large skillet over medium-high heat 2 minutes.
  5. Fill each hoagie roll with shrimp salad; top with shredded lettuce, if desired.

Side Dish Ingredients

  • 2 large apples, chopped
  • 2 cups seedless red grapes
  • 1 cup mini marshmallows
  • ½ cup chopped pecans (or use other favorite nuts)
  • ¼ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
