Grilled Poblano Chile Burgers
Mexican CornIngredients
- 2 fresh poblano or Anaheim chile peppers
- 1 egg, lightly beaten
- ¾ cup soft bread crumbs
- ½ cup shredded carrot
- 2 Tbsp water
- 1 clove garlic, minced
- 1 tsp dried oregano, crushed
- ½ tsp salt
- ¼ tsp black pepper
- 1 lb lean ground beef
- 4 rolls, split and toasted
- Toppers, such as sliced tomato, mashed avocado, and/or poblano pepper slices
Instructions
- Preheat oven to 425°F. Preheat charcoal or gas grill to medium. Cut chile peppers in half lengthwise; remove stems, seeds, and membranes.
- Place pepper halves, cut sides down, on a foil-lined baking sheet. Roast 20 to 25 minutes or until charred and very tender. Bring foil up around peppers and fold edges together to enclose.
- Let stand 15 minutes or until cool enough to handle. Peel off and discard skins. Chop peppers.
- In a large bowl combine next eight ingredients (through black pepper): stir in roasted peppers. Add ground beef; mix well. Shape mixture into four ¾-inch-thick patties.
- Grill patties, covered, directly over heat 14 to 18 minutes or until done (160°F), turning once. Fill rolls with burgers and, if desired, tomato slices, avocado, and additional poblano slices.
Side Dish Ingredients
- 6 ears of corn, husks and silks removed
- 2 Tbsp Mexican crema
- 2 Tbsp butter, softened
- 2 Tbsp crumbled queso fresco
- Ground ancho chile pepper
- Coarse salt
- Lime wedges
Side Dish Instructions
- In a large saucepan cook corn in enough boiling salted water to cover 5 to 7 minutes or until tender. Remove ears from water; cool slightly.
- Using a serrated knife carefully cut kernels from cobs, leaving kernels in slabs. Serve topped with crema, butter, and queso fresco. Sprinkle each serving lightly with ancho chile pepper and salt. Serve with lime wedges.
