Pizza Margherita
Baby Spinach Salad
Ingredients
- Nonstick cooking spray
- 1 (11-oz) pkg refrigerated thin-crust pizza dough
- 1 Tbsp olive oil
- 2 cups grape tomatoes, halved
- 8 oz small fresh mozzarella cheese balls, sliced
- 2 cloves garlic, minced
- ½ cup fresh basil leaves
- Coarse ground black pepper
Instructions
- Preheat oven to 400°F. Coat a 15x10-inch baking pan with cooking spray. Unroll pizza dough in the prepared pan. Press onto the bottom and slightly up the sides of the pan. Brush with oil. Bake 7 minutes.
- Top with tomatoes, cheese, and garlic. Bake 8 to 10 minutes more or until crust is golden brown. Tear or snip large basil leaves. Sprinkle the basil and pepper over pizza.
Side Dish Ingredients
- 4 tsp lemon juice
- 4 tsp olive oil
- 2 tsp honey
- 6 cups fresh baby spinach
- Salt
- Coarsely ground black pepper
- Toasted pine nuts (optional)
Side Dish Instructions
- In a large bowl whisk together lemon juice, oil, and honey. Add spinach; toss gently to coat. Season to taste with salt and pepper. If desired, sprinkle with pine nuts.
