Chicken Thighs with Caper Sauce
Orzo with Spinach
Ingredients
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 2 lb boneless, skinless chicken thighs
- ¼ cup capers, drained
- 1 (14.5-oz) can low-sodium chicken broth
- 4 sprigs fresh thyme
Instructions
- Place onion and garlic in a 5- to 7-quart slow cooker.
- Season chicken lightly with salt and pepper; place on onion, and sprinkle with capers. Add broth and thyme.
- Cover and cook on LOW 6 hours or until chicken is done. Shred chicken with two forks before serving.

- 2 cups whole wheat orzo
- 2 cloves garlic, minced
- 3 (14.5-oz) cans low-sodium chicken broth
- 2 (6-oz) pkg organic baby spinach
Side Dish Instructions
- Melt 2 Tbsp butter in a large saucepan. Add orzo and garlic; cook, stirring often, 2 minutes.
- Add broth; bring to a boil, reduce heat, and simmer until pasta is tender.
- Stir in spinach; cover and let stand 2 minutes or until spinach is wilted. Season with salt and pepper to taste.
