Easy Barbecue Pork Sandwiches

Ingredients

  • 2 onions, thinly sliced
  • 3 lb boneless Boston butt pork roast
  • 1½ cups cola soft drink
  • 1 cup barbecue sauce
  • 1 (8-count) pkg hamburger buns

Instructions

  1. Place onions in a 5- to 7-quart slow cooker; top with roast, cola, and barbecue sauce. Cover and cook on LOW 8 to 10 hours or until pork roast is tender.
  2. Shred pork with 2 forks. Serve pork on buns with additional barbecue sauce.

  • 3 Tbsp apple cider vinegar
  • 2 Tbsp olive oil
  • 2 Tbsp mayonnaise
  • 1 Tbsp Dijon mustard
  • 1 Tbsp honey
  • 1 (16-oz) pkg tricolor coleslaw
  • 1 (28-oz) can baked beans

Side Dish Instructions

  1. Whisk together vinegar, oil, mayonnaise, mustard, and honey in a large bowl. Add slaw; toss. Chill until ready to serve.
  2. Heat beans according to package directions.
