Fiesta Taco Salad

- 2 lb ground turkey (or use ground beef)
- 1 (1-oz) envelope taco seasoning mix
- 1 (15-oz) can corn, drained
- 1 (10-oz) can mild diced tomatoes and green chiles
- ½ cup taco sauce
- 1 (11-oz) pkg tortilla chips (or use multigrain tortilla chips)
- 1 (8-oz) pkg shredded iceberg lettuce
- 2 cups shredded Mexican-blend cheese
- 1 (8-oz) carton sour cream
Instructions
- Cook turkey in a large skillet 10 minutes; drain. Combine turkey, taco seasoning, corn, tomatoes, and taco sauce in a 5- or 6-quart slow cooker.
- Cover and cook on LOW 4 to 6 hours. Save 3½ cups turkey mixture for Easy Enchiladas recipe.
- Divide tortilla chips among plates; top with lettuce, turkey mixture, cheese, and sour cream.
Side Dish Ingredients
- 1 (16.5-oz) pkg refrigerated sugar cookie dough
- 1 (8-oz) block cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 2 bananas, sliced
- 1 cup sliced strawberries
- ⅓ cup blueberries
- Chocolate syrup
Side Dish Instructions
- Preheat oven to 350°F. Press cookie dough into a lightly greased 12-inch pizza pan. Bake 12 to 14 minutes or until golden brown. Cool completely.
- Beat cream cheese at medium-high speed with a mixer until smooth and fluffy. Add sugar and vanilla. Beat until well blended.
- Spread cream cheese mixture over cooled cookie. Top with bananas and berries. Drizzle with chocolate syrup. Cut into wedges, or chill until ready to serve.
