Grilled Steak with Tomato-Watermelon Salad

Ingredients

  • 2 cloves garlic, minced
  • 6 Tbsp olive oil, divided
  • 2 lb flank steak
  • 1 tsp kosher salt, divided
  • 1 tsp pepper, divided
  • 2 Tbsp red wine vinegar
  • 3 lb heirloom tomatoes, cut into wedges
  • 1 (16-oz) container cubed watermelon (or use wedges)
  • ½ cup thinly sliced red onion
  • ½ cup torn fresh basil

Instructions

  1. Combine garlic and 2 Tbsp oil; rub over steak. Sprinkle steak with ½ tsp each salt and pepper.
  2. Grill steak, covered, 6 to 8 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  3. Whisk together ¼ cup oil, vinegar, and ½ tsp each salt and pepper in a bowl.
  4. Arrange tomatoes, watermelon, and onion on a large platter; drizzle with oil mixture. Sprinkle with basil. Serve with steak.
