Grilled Steak with Tomato-Watermelon Salad

Ingredients
- 2 cloves garlic, minced
- 6 Tbsp olive oil, divided
- 2 lb flank steak
- 1 tsp kosher salt, divided
- 1 tsp pepper, divided
- 2 Tbsp red wine vinegar
- 3 lb heirloom tomatoes, cut into wedges
- 1 (16-oz) container cubed watermelon (or use wedges)
- ½ cup thinly sliced red onion
- ½ cup torn fresh basil
Instructions
- Combine garlic and 2 Tbsp oil; rub over steak. Sprinkle steak with ½ tsp each salt and pepper.
- Grill steak, covered, 6 to 8 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
- Whisk together ¼ cup oil, vinegar, and ½ tsp each salt and pepper in a bowl.
- Arrange tomatoes, watermelon, and onion on a large platter; drizzle with oil mixture. Sprinkle with basil. Serve with steak.
