Skillet Barbecue Chicken Thighs with Crunchy Apple Slaw
Ingredients
- 2 lb boneless, skinless chicken thighs
- 2 Tbsp olive oil
- ½ (18-oz) bottle spicy barbecue sauce (such as Stubbs)
- 1 (16-oz) pkg tricolor coleslaw
- 2 apples, thinly sliced (such as Fuji)
- ½ cup olive-oil mayonnaise
- 2 Tbsp apple cider vinegar
- 2 tsp honey
- ½ tsp salt
- ½ tsp pepper
Instructions
- Cook chicken, in batches, in hot oil in a large nonstick skillet over medium-high heat until done. Return all chicken to skillet. Add barbecue sauce to skillet; cook 1 to 2 minutes or until sauce is thoroughly heated and chicken is well coated.
- Stir together coleslaw, apples, mayonnaise, vinegar, honey, salt, and pepper. Serve coleslaw with chicken.
