Grilled Halloumi Salad with Charred Peaches

Ingredients

  • 2 peaches, halved crosswise
  • ½ red onion, cut into wedges
  • ½ (8-oz) block halloumi cheese, cut into ½-inch-thick slices (see Note)
  • 2½ Tbsp olive oil, divided
  • ¼ tsp kosher salt
  • ⅛ tsp pepper
  • ½ (5-oz) pkg arugula
  • ½ (1-oz) pkg fresh basil, torn
  • 1½ Tbsp balsamic glaze

Instructions

  1. Preheat grill to medium-high heat. Brush peaches, onion, and cheese with 1½ Tbsp oil.
  2. Grill onion, covered, 8 minutes or until tender and slightly charred. Grill peaches, cut sides down and covered, 3 to 5 minutes or until charred. Grill cheese, covered, 2 minutes per side or until grill marks appear.
  3. Cut peaches into wedges. Sprinkle peaches, onion, and cheese with salt and pepper.
  4. Divide arugula among 3 plates; top with cheese, peaches, and onion. Sprinkle with basil; drizzle with 1 Tbsp oil and balsamic glaze.

Side Dish Ingredients

  • 3 (2-oz) slices bakery bread (preferably multigrain)
  • 1 clove garlic, halved
  • 1 Tbsp extra virgin olive oil

Side Dish Instructions

  1. Preheat grill to medium-high heat. Grill bread, covered, 2 minutes per side or until lightly browned.
  2. Rub 1 side of each slice with garlic, and drizzle with oil.
