Jerk Pork Tenderloin with Mango Salsa
Cinnamon Mashed Carrots
Ingredients
- ¾ lb pork tenderloin
- ½ Tbsp Jerk seasoning
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 Tbsp olive oil
- ½ cup diced mango
- ½ red bell pepper, minced
- ½ small jalapeño pepper, seeded and minced
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp fresh lime juice
Instructions
- Preheat oven to 425°F. Rub pork with Jerk seasoning and ⅛ tsp each salt and pepper. Cook in hot oil in a large cast-iron or ovenproof skillet over medium-high heat 5 minutes or until browned on all sides.
- Transfer skillet to oven, and bake 12 to 15 minutes or until a meat thermometer inserted into pork reads 145°F; let stand 3 minutes before slicing.
- Meanwhile, toss together mango, bell pepper, jalapeño, cilantro, lime juice, and ⅛ tsp each salt and pepper. Serve salsa over pork.

- 5 carrots, chopped
- 2 Tbsp butter
- ⅛ tsp ground cinnamon
Side Dish Instructions
- Bring carrots and salted water to cover to a boil in a large saucepan; cook 18 minutes or until tender.
- Drain and return to pan over medium heat. Add butter and cinnamon. Mash with a potato masher to desired consistency. Season with salt and pepper to taste.
