Jerk Pork Tenderloin with Mango Salsa

Ingredients

  • ¾ lb pork tenderloin
  • ½ Tbsp Jerk seasoning
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 Tbsp olive oil
  • ½ cup diced mango
  • ½ red bell pepper, minced
  • ½ small jalapeño pepper, seeded and minced
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp fresh lime juice

Instructions

  1. Preheat oven to 425°F. Rub pork with Jerk seasoning and ⅛ tsp each salt and pepper. Cook in hot oil in a large cast-iron or ovenproof skillet over medium-high heat 5 minutes or until browned on all sides.
  2. Transfer skillet to oven, and bake 12 to 15 minutes or until a meat thermometer inserted into pork reads 145°F; let stand 3 minutes before slicing.
  3. Meanwhile, toss together mango, bell pepper, jalapeño, cilantro, lime juice, and ⅛ tsp each salt and pepper. Serve salsa over pork.

Side Dish Ingredients

  • 5 carrots, chopped
  • 2 Tbsp butter
  • ⅛ tsp ground cinnamon

Side Dish Instructions

  1. Bring carrots and salted water to cover to a boil in a large saucepan; cook 18 minutes or until tender.
  2. Drain and return to pan over medium heat. Add butter and cinnamon. Mash with a potato masher to desired consistency. Season with salt and pepper to taste.
