Italian Grilled Cheese

Ingredients

  • 4 slices light whole wheat sandwich bread (such as Pepperidge Farm)
  • ⅓ cup shredded Parmesan cheese
  • 2½ Tbsp reduced-fat mayonnaise
  • ¼ tsp yellow mustard
  • 2 Tbsp finely chopped onion
  • 2 Tbsp chopped fresh basil
  • 1 Roma tomato, thinly sliced
  • 2 tsp olive oil

Instructions

  1. Coat both sides of bread with cooking spray. Stir together cheese, mayonnaise, and mustard.
  2. Spread cheese mixture on 2 bread slices; top with onion, basil, tomato, and remaining bread. Gently press down to adhere.
  3. Cook sandwiches in hot oil in a large skillet over medium heat 2 minutes per side or until golden brown and cheese is melted.

Side Dish Ingredients

  • 2 Tbsp strawberry fruit spread
  • 2 cups strawberries, halved
  • ½ tsp vanilla extract

Side Dish Instructions

  1. Microwave fruit spread in a microwave-safe bowl at HIGH 20 seconds or until melted. Stir in strawberries and vanilla.
