Italian Grilled Cheese
Vanilla-Glazed Strawberries
Ingredients
- 4 slices light whole wheat sandwich bread (such as Pepperidge Farm)
- ⅓ cup shredded Parmesan cheese
- 2½ Tbsp reduced-fat mayonnaise
- ¼ tsp yellow mustard
- 2 Tbsp finely chopped onion
- 2 Tbsp chopped fresh basil
- 1 Roma tomato, thinly sliced
- 2 tsp olive oil
Instructions
- Coat both sides of bread with cooking spray. Stir together cheese, mayonnaise, and mustard.
- Spread cheese mixture on 2 bread slices; top with onion, basil, tomato, and remaining bread. Gently press down to adhere.
- Cook sandwiches in hot oil in a large skillet over medium heat 2 minutes per side or until golden brown and cheese is melted.
Side Dish Ingredients
- 2 Tbsp strawberry fruit spread
- 2 cups strawberries, halved
- ½ tsp vanilla extract
Side Dish Instructions
- Microwave fruit spread in a microwave-safe bowl at HIGH 20 seconds or until melted. Stir in strawberries and vanilla.
