Grilled Pineapple with Coconut Ice Cream

Ingredients
- 1 pineapple, peeled
- 1 lime, halved
- ½ (48-oz) carton coconut ice cream
- 1 (12-oz) jar caramel sauce
Instructions
- Preheat grill or grill pan to medium heat. Cut pineapple into 8 slices. Cut core from the center of each round using a small cookie cutter or knife.
- Grill pineapple on a greased grill rack, covered, 4 to 5 minutes per side or until grill marks appear.
- Drizzle pineapple with lime juice. Top each ring with a scoop of ice cream. Drizzle with caramel sauce.
