Salisbury Steak with Caramelized Onion Gravy
Garlic Mashed Sweet PotatoesIngredients
- 2 lb grass-fed ground beef
- 1 Tbsp whole-grain mustard
- 1 tsp salt
- 1 tsp pepper
- 1 large egg, lightly beaten
- 2 large red onions, thinly sliced
- 2 Tbsp avocado oil
- 2 Tbsp tomato paste
- 1 Tbsp chopped fresh thyme
- 3 cups organic beef broth, divided
- 2 Tbsp arrowroot
Instructions
- Stir together beef, mustard, salt, and pepper in a large bowl; add egg, stirring to combine. Shape mixture into 6 patties.
- Cook patties in a large skillet over medium-high heat 4 to 5 minutes per side or until no longer pink. Keep warm.
- Meanwhile, cook onion in hot oil in a large skillet over medium heat, covered, 20 minutes, stirring occasionally, or until tender. Uncover, increase heat to medium-high, and cook, stirring often, until very tender and caramel colored.
- Stir in tomato paste and thyme. Add 2¾ cups broth; bring to a boil, and cook 5 minutes.
- Combine arrowroot and ¼ cup broth; add to gravy, and cook, stirring constantly, 1 minute or until thickened. Spoon gravy over patties.
Side Dish Ingredients
- 2 lb sweet potatoes, peeled and diced
- 2 cloves garlic, minced
- 1 Tbsp avocado oil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Microwave potatoes in a microwavable container at HIGH 15 minutes or until tender.
- Cook garlic in hot oil in a saucepan over medium heat 2 minutes. Stir garlic, salt, and pepper into potatoes; mash to desired consistency.
