Skillet-Fried Lemon Chicken
Sesame Broccoli and Snow Pea Stir-Fry
Ingredients
- 1½ lb boneless, skinless chicken breasts, halved lengthwise
- ½ tsp salt
- ½ tsp pepper
- 2 large eggs, beaten
- 1 tsp lemon zest
- 1½ cups panko breadcrumbs (preferably whole wheat)
- 3 Tbsp olive oil
- Lemon wedges
Instructions
- Pound chicken to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with salt and pepper.
- Place eggs in a shallow bowl; combine lemon zest and panko in a second shallow bowl. Dip chicken in eggs; dredge in panko, pressing gently to adhere.
- Cook chicken, in batches, in hot oil in a large nonstick skillet over medium heat 4 minutes per side or until chicken is done. Serve with lemon wedges.

- 1 Tbsp minced ginger
- 1 (12-oz) pkg broccoli florets
- 1 lb organic snow peas, trimmed
- 1 cup diagonally sliced organic celery
- 3 green onions, cut into 1-inch pieces
- 3 Tbsp dark sesame oil
- 3 Tbsp low-sodium soy sauce
- ¼ cup water
Side Dish Instructions
- Sauté ginger, broccoli, snow peas, celery, and onions in hot oil in a large nonstick skillet over medium-high heat 2 minutes.
- Add soy sauce and water. Cover and cook 5 minutes or until vegetables are almost tender. Uncover and cook 2 minutes or until liquid is evaporated.
