Skillet-Fried Lemon Chicken

Sesame Broccoli and Snow Pea Stir-Fry

Ingredients

  • 1½ lb boneless, skinless chicken breasts, halved lengthwise
  • ½ tsp salt
  • ½ tsp pepper
  • 2 large eggs, beaten
  • 1 tsp lemon zest
  • 1½ cups panko breadcrumbs (preferably whole wheat)
  • 3 Tbsp olive oil
  • Lemon wedges

Instructions

  1. Pound chicken to ½-inch thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with salt and pepper.
  2. Place eggs in a shallow bowl; combine lemon zest and panko in a second shallow bowl. Dip chicken in eggs; dredge in panko, pressing gently to adhere.
  3. Cook chicken, in batches, in hot oil in a large nonstick skillet over medium heat 4 minutes per side or until chicken is done. Serve with lemon wedges.

  • 1 Tbsp minced ginger
  • 1 (12-oz) pkg broccoli florets
  • 1 lb organic snow peas, trimmed
  • 1 cup diagonally sliced organic celery
  • 3 green onions, cut into 1-inch pieces
  • 3 Tbsp dark sesame oil
  • 3 Tbsp low-sodium soy sauce
  • ¼ cup water

Side Dish Instructions

  1. Sauté ginger, broccoli, snow peas, celery, and onions in hot oil in a large nonstick skillet over medium-high heat 2 minutes.
  2. Add soy sauce and water. Cover and cook 5 minutes or until vegetables are almost tender. Uncover and cook 2 minutes or until liquid is evaporated.
