Tex-Mex Egg and Sausage Tacos
Ingredients
- ½ lb lean ground turkey breakfast sausage
- 4 large eggs
- ¼ tsp salt
- ¼ tsp pepper
- 8 corn tortillas
- ½ cup refrigerated salsa
Instructions
- Cook sausage in a nonstick skillet over medium-high heat 5 to 6 minutes or until browned and crumbly. Drain; return to pan.
- Whisk together eggs, salt, and pepper. Add egg mixture to sausage. Reduce heat to medium; cook, without stirring, until mixture begins to set on bottom. Cook, stirring constantly, until eggs are thickened and set.
- Meanwhile, warm tortillas according to package directions. Serve egg mixture in tortillas with salsa.
