Tex-Mex Egg and Sausage Tacos

Ingredients

  • ½ lb lean ground turkey breakfast sausage
  • 4 large eggs
  • ¼ tsp salt
  • ¼ tsp pepper
  • 8 corn tortillas
  • ½ cup refrigerated salsa

Instructions

  1. Cook sausage in a nonstick skillet over medium-high heat 5 to 6 minutes or until browned and crumbly. Drain; return to pan.
  2. Whisk together eggs, salt, and pepper. Add egg mixture to sausage. Reduce heat to medium; cook, without stirring, until mixture begins to set on bottom. Cook, stirring constantly, until eggs are thickened and set.
  3. Meanwhile, warm tortillas according to package directions. Serve egg mixture in tortillas with salsa.
