English Muffin French Toast
Fresh Blueberry Sauce
Ingredients
- ½ cup 1% low-fat milk
- ½ tsp sugar
- ¼ tsp pure vanilla extract
- 2 large eggs, beaten
- 4 whole wheat English muffins, split
Instructions
- Whisk together milk, sugar, vanilla, and eggs in a shallow dish. Dip muffins in egg mixture, soaking both sides.
- Cook on a large griddle or in a large nonstick skillet coated with cooking spray over medium-high heat 1 to 2 minutes per side or until golden.
Side Dish Ingredients
- 1½ cups blueberries
- 3 Tbsp sugar
- 2 Tbsp water
- 1 tsp fresh lemon juice
- ¼ tsp grated lemon rind
Side Dish Instructions
- Bring blueberries, sugar, and water to a simmer in a small saucepan. Cook 6 minutes or berries begin to burst and sauce is slightly thickened, stirring occasionally. Stir in lemon juice and rind.
