Grilled Steak, Bok Choy, and Mushrooms

Ingredients

  • 2½ Tbsp soy sauce
  • 1½ Tbsp seasoned rice vinegar
  • 1½ Tbsp dark sesame oil
  • 1 Tbsp ginger paste
  • 4 tsp brown sugar
  • ½ (8-oz) pkg whole baby portobello mushrooms
  • ¾ lb skirt steak
  • 2 heads baby bok choy, halved lengthwise

Instructions

  1. Preheat grill to medium-high heat. Microwave soy sauce, vinegar, oil, ginger paste, and sugar in a microwave-safe bowl at HIGH 30 seconds to 1 minute or until sugar is dissolved, stirring as needed.
  2. Divide sauce between 2 bowls. Thread mushrooms onto metal skewers. Brush steak, mushrooms, and bok choy with one portion of sauce.
  3. Grill steak, covered, 6 to 8 minutes per side or to desired doneness, basting with sauce occasionally. Grill vegetables, covered, 4 minutes per side or until crisp-tender, basting with sauce occasionally.
  4. Remove mushrooms from skewers. Serve steak, mushrooms, and bok choy with remaining portion of sauce for dipping.
