Mini Italian Turkey Meat Loaves

Ingredients

  • 1 cup frozen seasoning blend (diced onion, bell peppers, and celery)
  • 1 Tbsp minced garlic
  • 1½ cups panko breadcrumbs (preferably whole wheat)
  • 1 cup natural marinara sauce (such as Rao's), divided
  • ½ tsp salt
  • ½ tsp pepper
  • 2 large eggs, lightly beaten
  • 1½ lb ground turkey
  • 1 cup shredded mozzarella cheese
  • ¼ cup small fresh basil leaves

Instructions

  1. Preheat oven to 450°F. Microwave seasoning blend in a large bowl at HIGH 2 minutes or until tender. Stir in garlic, breadcrumbs, ¼ cup marinara sauce, salt, pepper, and eggs; add turkey, and gently combine.
  2. Shape mixture into 6 small loaves. Place on a wire rack on a foil-lined rimmed baking sheet; top with ¾ cup marinara sauce.
  3. Bake 15 minutes. Sprinkle with cheese; bake 5 minutes longer or until no longer pink in centers. Sprinkle with chopped fresh basil.

  • 2 Tbsp olive oil
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • ¼ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together green beans, oil, salt, and pepper on a large rimmed baking sheet. Bake 10 minutes or until beans are browned. Sprinkle with cheese; toss.
