Mini Italian Turkey Meat Loaves
Roasted Parmesan Green BeansIngredients
- 1 cup frozen seasoning blend (diced onion, bell peppers, and celery)
- 1 Tbsp minced garlic
- 1½ cups panko breadcrumbs (preferably whole wheat)
- 1 cup natural marinara sauce (such as Rao's), divided
- ½ tsp salt
- ½ tsp pepper
- 2 large eggs, lightly beaten
- 1½ lb ground turkey
- 1 cup shredded mozzarella cheese
- ¼ cup small fresh basil leaves
Instructions
- Preheat oven to 450°F. Microwave seasoning blend in a large bowl at HIGH 2 minutes or until tender. Stir in garlic, breadcrumbs, ¼ cup marinara sauce, salt, pepper, and eggs; add turkey, and gently combine.
- Shape mixture into 6 small loaves. Place on a wire rack on a foil-lined rimmed baking sheet; top with ¾ cup marinara sauce.
- Bake 15 minutes. Sprinkle with cheese; bake 5 minutes longer or until no longer pink in centers. Sprinkle with chopped fresh basil.

- 2 Tbsp olive oil
- ¼ tsp kosher salt
- ¼ tsp pepper
- ¼ cup freshly grated Parmesan cheese
Side Dish Instructions
- Preheat oven to 450°F. Toss together green beans, oil, salt, and pepper on a large rimmed baking sheet. Bake 10 minutes or until beans are browned. Sprinkle with cheese; toss.
