Grilled Chicken with Peaches and Red Onions

Ingredients

  • 3 Tbsp olive oil, divided
  • 2 Tbsp white wine vinegar
  • 2 tsp honey
  • 3 peaches, pitted and sliced
  • ½ small red onion, thinly sliced
  • 6 (6-oz) boneless, skinless chicken breasts
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Whisk together 1 Tbsp oil, vinegar, and honey; pour over peaches and onion in a medium bowl.
  3. Brush chicken with remaining oil; lightly season with salt and pepper. Grill chicken, covered, 6 minutes per side or until done.
  4. Stir basil into peach mixture. Spoon over chicken.

Side Dish Ingredients

  • 1 lb asparagus
  • 2 Tbsp olive oil
  • ¼ cup shredded Parmesan cheese

Side Dish Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Toss asparagus with oil; lightly season with salt and pepper. Grill 5 to 6 minutes or until crisp-tender; divide among 6 plates. Sprinkle with cheese.
