Grilled Chicken with Peaches and Red Onions
Grilled Asparagus with Parmesan
Ingredients
- 3 Tbsp olive oil, divided
- 2 Tbsp white wine vinegar
- 2 tsp honey
- 3 peaches, pitted and sliced
- ½ small red onion, thinly sliced
- 6 (6-oz) boneless, skinless chicken breasts
- ¼ cup chopped fresh basil
Instructions
- Preheat grill or grill pan to medium-high heat.
- Whisk together 1 Tbsp oil, vinegar, and honey; pour over peaches and onion in a medium bowl.
- Brush chicken with remaining oil; lightly season with salt and pepper. Grill chicken, covered, 6 minutes per side or until done.
- Stir basil into peach mixture. Spoon over chicken.

- 1 lb asparagus
- 2 Tbsp olive oil
- ¼ cup shredded Parmesan cheese
Side Dish Instructions
- Preheat grill or grill pan to medium-high heat.
- Toss asparagus with oil; lightly season with salt and pepper. Grill 5 to 6 minutes or until crisp-tender; divide among 6 plates. Sprinkle with cheese.
