Spicy Pan-Fried Pork Chops

Ingredients

  • ¾ lb thin boneless pork chops
  • ¼ tsp salt
  • ¼ tsp crushed red pepper
  • 1 large egg
  • ½ Tbsp water
  • ¾ cup panko breadcrumbs (preferably whole wheat)
  • 1½ Tbsp olive oil
  • 2 tsp chopped fresh cilantro
  • ½ lime, cut into wedges

Instructions

  1. Sprinkle pork with salt and red pepper.
  2. Whisk together egg and water in a shallow bowl. Place panko in a second shallow bowl. Dip pork in egg mixture, letting excess drip off; dredge in panko, pressing gently to adhere.
  3. Cook pork in hot oil in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until done. Sprinkle with cilantro, and serve with lime wedges.

  • ½ (8-oz) pkg brown rice noodles
  • ½ (11-oz) pkg chopped organic Asian ginger salad kit (such as Taylor Farms)
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Prepare noodles according to package directions.
  2. Prepare salad according to package directions. Add noodles and cilantro; toss.
