Curry Pork Chops

Ingredients

  • 2 (4-oz) boneless center-cut loin pork chops
  • ½ tsp curry powder
  • ¼ tsp ground cumin
  • ⅛ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Coat pork chops with cooking spray; sprinkle with curry powder, cumin, salt and pepper.
  2. Cook pork chops in a nonstick skillet over medium heat 4 minutes per side or until done.

Side Dish Ingredients

  • 1 (12-oz) pkg green beans
  • ½ cup water
  • 1 tsp olive oil
  • ¼ cup crumbled reduced-fat blue cheese
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 cups sliced peaches
  • 1 Tbsp fresh lemon juice

Side Dish Instructions

  1. Bring beans and water to a boil in a skillet. Reduce heat; cover and cook 3 minutes or until beans are crisp-tender.
  2. Uncover; cook 3 minutes longer or until liquid evaporates.
  3. Add oil; cook 1 minute. Remove from heat; toss with blue cheese, salt and pepper.
  4. Place peaches in a small serving bowl and drizzle with lemon juice; toss to coat.
  5. Serve beans and peaches alongside pork chops.
