Curry Pork Chops
Blue Cheese Green Beans and Sliced PeachesIngredients
- 2 (4-oz) boneless center-cut loin pork chops
- ½ tsp curry powder
- ¼ tsp ground cumin
- ⅛ tsp salt
- ⅛ tsp pepper
Instructions
- Coat pork chops with cooking spray; sprinkle with curry powder, cumin, salt and pepper.
- Cook pork chops in a nonstick skillet over medium heat 4 minutes per side or until done.
Side Dish Ingredients
- 1 (12-oz) pkg green beans
- ½ cup water
- 1 tsp olive oil
- ¼ cup crumbled reduced-fat blue cheese
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 cups sliced peaches
- 1 Tbsp fresh lemon juice
Side Dish Instructions
- Bring beans and water to a boil in a skillet. Reduce heat; cover and cook 3 minutes or until beans are crisp-tender.
- Uncover; cook 3 minutes longer or until liquid evaporates.
- Add oil; cook 1 minute. Remove from heat; toss with blue cheese, salt and pepper.
- Place peaches in a small serving bowl and drizzle with lemon juice; toss to coat.
- Serve beans and peaches alongside pork chops.
