Meatball "Gyro" Lettuce Wraps
Carrot "Fries"Ingredients
- 8 oz uncooked chicken meatballs, halved (such as Murray's)
- 4 romaine lettuce leaves
- ½ small cucumber, sliced
- 1 small tomato, sliced
- ¼ cup thinly sliced red onion
- ¼ cup refrigerated tzatziki-Ranch Greek yogurt dressing (such as Litehouse)
- 3 Tbsp crumbled feta cheese
Instructions
- Preheat oven to 450°F. Line a rimmed baking sheet with foil; place a greased wire rack over foil.
- Place meatballs on rack. Bake 15 minutes or until browned and done.
- Arrange lettuce in 2 stacks; top with meatballs, cucumber, tomato, onion, dressing, and cheese.
Side Dish Ingredients
- ½ lb carrots, peeled
- 2 Tbsp olive oil
- ½ tsp garlic powder
Side Dish Instructions
- Preheat oven to 450°F. Quarter carrots lengthwise; cut in half crosswise. Toss with oil, garlic powder, and desired amount of salt and pepper on a greased rimmed baking sheet; spread in a single layer.
- Bake 18 minutes or until carrots are tender.
