Meatball "Gyro" Lettuce Wraps

Ingredients

  • 8 oz uncooked chicken meatballs, halved (such as Murray's)
  • 4 romaine lettuce leaves
  • ½ small cucumber, sliced
  • 1 small tomato, sliced
  • ¼ cup thinly sliced red onion
  • ¼ cup refrigerated tzatziki-Ranch Greek yogurt dressing (such as Litehouse)
  • 3 Tbsp crumbled feta cheese

Instructions

  1. Preheat oven to 450°F. Line a rimmed baking sheet with foil; place a greased wire rack over foil.
  2. Place meatballs on rack. Bake 15 minutes or until browned and done.
  3. Arrange lettuce in 2 stacks; top with meatballs, cucumber, tomato, onion, dressing, and cheese.

Side Dish Ingredients

  • ½ lb carrots, peeled
  • 2 Tbsp olive oil
  • ½ tsp garlic powder

Side Dish Instructions

  1. Preheat oven to 450°F. Quarter carrots lengthwise; cut in half crosswise. Toss with oil, garlic powder, and desired amount of salt and pepper on a greased rimmed baking sheet; spread in a single layer.
  2. Bake 18 minutes or until carrots are tender.
