Super-Easy Saucy Meatballs
Roasted Carrots and Mashed Potatoes
Ingredients
- 2 lb ground beef
- 1 Tbsp Montreal steak seasoning
- 2 (18-oz) bottles barbecue sauce
Instructions
- Combine beef and seasoning. Shape into 1-inch meatballs.
- Heat a large nonstick skillet over medium-high heat. Cook half of meatballs 10 minutes or until done, turning occasionally.
- Transfer meatballs to a saucepan. Repeat with remaining meatballs.
- Add rest of meatballs and barbecue sauce to saucepan. Cook over medium heat 5 to 10 minutes.
- Or keep meatballs and sauce warm in a slow cooker up to 2 hours on LOW.
Side Dish Ingredients
- 1½ lb carrots, sliced
- 2 Tbsp olive oil
- ½ tsp salt
- 1 (32-oz) pkg family-size refrigerated mashed potatoes
Side Dish Instructions
- Preheat oven to 425°F. Toss together carrots, oil, and salt on a rimmed baking sheet. Bake 20 to 30 minutes or until carrots are tender, stirring once.
- Cook mashed potatoes in microwave according to package directions.
