Kid-Approved Grilled Chicken

Ingredients

  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 1 Tbsp chopped fresh thyme
  • 1 Tbsp lemon zest
  • 1 tsp salt
  • 1 tsp pepper
  • 6 boneless, skinless chicken breasts, pounded to an even thickness

Instructions

  1. Combine oil and remaining ingredients except chicken in a gallon-size zip-top bag. Add chicken; seal bag, and turn to coat chicken. Chill at least 2 hours or up to 24 hours.
  2. Preheat grill to medium-high heat. Remove chicken from marinade, discarding marinade.
  3. Grill chicken, covered, 5 to 6 minutes per side or until done.

Side Dish Ingredients

  • 6 small ears corn
  • 4 Tbsp butter, divided
  • 2 (12-oz) pkg green beans

Side Dish Instructions

  1. Cook corn in a pot of boiling salted water 10 to 15 minutes or until tender; drain and rub corn with 2 Tbsp butter. Season with salt and pepper to taste.
  2. Cook green beans according to package directions; transfer to a bowl, and add 2 Tbsp butter.
