Kid-Approved Grilled Chicken
Corn on the Cob and Green Beans
Ingredients
- ¼ cup olive oil
- 2 cloves garlic, minced
- 1 Tbsp chopped fresh thyme
- 1 Tbsp lemon zest
- 1 tsp salt
- 1 tsp pepper
- 6 boneless, skinless chicken breasts, pounded to an even thickness
Instructions
- Combine oil and remaining ingredients except chicken in a gallon-size zip-top bag. Add chicken; seal bag, and turn to coat chicken. Chill at least 2 hours or up to 24 hours.
- Preheat grill to medium-high heat. Remove chicken from marinade, discarding marinade.
- Grill chicken, covered, 5 to 6 minutes per side or until done.
Side Dish Ingredients
- 6 small ears corn
- 4 Tbsp butter, divided
- 2 (12-oz) pkg green beans
Side Dish Instructions
- Cook corn in a pot of boiling salted water 10 to 15 minutes or until tender; drain and rub corn with 2 Tbsp butter. Season with salt and pepper to taste.
- Cook green beans according to package directions; transfer to a bowl, and add 2 Tbsp butter.
