Green Chile Cheeseburgers

Ingredients

  • 2 lb ground beef
  • 1 Tbsp ground cumin
  • 1 onion, cut into ¼-inch-thick slices
  • 1 (8-oz) pkg sliced Monterey Jack cheese
  • 1 (7-oz) can diced green chiles
  • 3 Tbsp chopped fresh cilantro
  • 6 hamburger buns, split
  • ½ head iceberg lettuce, shredded
  • 2 Roma tomatoes, thinly sliced

Instructions

  1. Preheat grill or grill pan to medium-high heat. Stir together beef and cumin. Season lightly with salt and pepper. Shape into 6 patties.
  2. Grill patties, covered, 5 to 6 minutes per side or until no longer pink. Grill onion, covered, 4 to 5 minutes per side or until charred and tender. Top burgers with cheese, and let stand 1 minute or until cheese is melted.
  3. Coarsely chop onions. Stir together onions, chiles, and cilantro. Season with salt and pepper to taste.
  4. Serve burgers on buns with lettuce, tomatoes, and desired amount of chile mixture.

  • 1 (11-oz) pkg tortilla chips
