Chicken Roll-Ups with Brie, Prosciutto, and Fig Preserves

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved lengthwise
  • ½ tsp salt
  • ½ tsp pepper
  • 4 thin slices prosciutto (about 2 oz) 
  • 4 oz Brie cheese, rind removed and cut into ¼-inch-thick planks
  • 6 Tbsp fig preserves
  • 1 cup panko breadcrumbs (preferably whole wheat)
  • 1 Tbsp chopped fresh rosemary
  • 1 large egg
  • 2 Tbsp olive oil

Instructions

  1. Preheat oven to 400°F. Sprinkle chicken with salt and pepper. Top each with prosciutto, cheese, and preserves. Roll up, and secure with wooden picks.
  2. Stir together breadcrumbs and rosemary in a shallow bowl. Beat egg lightly in a second shallow bowl. Dip chicken in egg; dredge in breadcrumb mixture.
  3. Cook chicken in hot oil in a cast-iron or other ovenproof skillet over medium-high heat 2 minutes per side. Transfer skillet to oven, and bake 10 to 15 minutes or until chicken is done.

  • 3 (8-oz) pkg French green beans
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • ¼ tsp crushed red pepper
  • 1 Tbsp fresh lemon juice
  • ½ tsp salt

Side Dish Instructions

  1. Cook beans in hot oil in a large skillet over medium-high heat 2 minutes. Add butter and red pepper; cook 3 minutes or until butter is browned and smells nutty, stirring often.
  2. Remove from heat. Stir in lemon juice and salt.
