Chicken Roll-Ups with Brie, Prosciutto, and Fig Preserves
Green Beans with Spicy Lemon Butter
Ingredients
- 2 lb boneless, skinless chicken breasts, halved lengthwise
- ½ tsp salt
- ½ tsp pepper
- 4 thin slices prosciutto (about 2 oz)
- 4 oz Brie cheese, rind removed and cut into ¼-inch-thick planks
- 6 Tbsp fig preserves
- 1 cup panko breadcrumbs (preferably whole wheat)
- 1 Tbsp chopped fresh rosemary
- 1 large egg
- 2 Tbsp olive oil
Instructions
- Preheat oven to 400°F. Sprinkle chicken with salt and pepper. Top each with prosciutto, cheese, and preserves. Roll up, and secure with wooden picks.
- Stir together breadcrumbs and rosemary in a shallow bowl. Beat egg lightly in a second shallow bowl. Dip chicken in egg; dredge in breadcrumb mixture.
- Cook chicken in hot oil in a cast-iron or other ovenproof skillet over medium-high heat 2 minutes per side. Transfer skillet to oven, and bake 10 to 15 minutes or until chicken is done.

- 3 (8-oz) pkg French green beans
- 1 Tbsp olive oil
- 1 Tbsp butter
- ¼ tsp crushed red pepper
- 1 Tbsp fresh lemon juice
- ½ tsp salt
Side Dish Instructions
- Cook beans in hot oil in a large skillet over medium-high heat 2 minutes. Add butter and red pepper; cook 3 minutes or until butter is browned and smells nutty, stirring often.
- Remove from heat. Stir in lemon juice and salt.
