Slow Cooker Chicken Cacciatore
Browned "Butter" BroccoliIngredients
- 2 lb boneless, skinless chicken breasts, cut into 3-inch pieces
- 1 red onion, thinly sliced
- 2 red or green bell peppers, thinly sliced
- 1 (14.5-oz) can fire-roasted diced tomatoes
- 3 cloves garlic, minced
- 1¼ tsp crushed red pepper
- 1 cup organic chicken broth
- ¼ cup chopped fresh parsley
Instructions
- Season chicken lightly with salt and pepper. Place in a lightly greased 5- or 6-quart slow cooker. Top with onion, bell peppers, tomatoes, garlic, red pepper, and broth.
- Cover and cook on LOW 8 hours. Sprinkle with parsley.

- 2 (12-oz) pkg broccoli florets
- ½ tsp kosher salt
- ½ tsp pepper
- ¼ cup ghee
Side Dish Instructions
- Preheat oven to 400°F. Place broccoli on a rimmed baking sheet; sprinkle with salt and pepper.
- Melt ghee in a small saucepan over medium heat, stirring constantly, 4 minutes or just until ghee begins to turn brown. Immediately drizzle ghee over broccoli; toss.
- Bake 12 minutes or until tender.
