Slow Cooker Chicken Cacciatore

Ingredients

  • 2 lb boneless, skinless chicken breasts, cut into 3-inch pieces
  • 1 red onion, thinly sliced
  • 2 red or green bell peppers, thinly sliced
  • 1 (14.5-oz) can fire-roasted diced tomatoes
  • 3 cloves garlic, minced
  • 1¼ tsp crushed red pepper
  • 1 cup organic chicken broth
  • ¼ cup chopped fresh parsley

Instructions

  1. Season chicken lightly with salt and pepper. Place in a lightly greased 5- or 6-quart slow cooker. Top with onion, bell peppers, tomatoes, garlic, red pepper, and broth.
  2. Cover and cook on LOW 8 hours. Sprinkle with parsley.

Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • ½ tsp kosher salt
  • ½ tsp pepper
  • ¼ cup ghee

Side Dish Instructions

  1. Preheat oven to 400°F. Place broccoli on a rimmed baking sheet; sprinkle with salt and pepper.
  2. Melt ghee in a small saucepan over medium heat, stirring constantly, 4 minutes or just until ghee begins to turn brown. Immediately drizzle ghee over broccoli; toss.
  3. Bake 12 minutes or until tender.
