Spice-Rubbed Chicken Thighs

Ingredients

  • 2 tsp smoked paprika
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • ¼ tsp cayenne pepper
  • 2 cloves garlic, minced
  • 2 lb bone-in, skinless chicken thighs
  • 2 Tbsp avocado oil
  • ½ tsp salt

Instructions

  1. Stir together paprika, oregano, cumin, cayenne pepper, and garlic; rub all over chicken. Chill 30 minutes to 1 hour.
  2. Preheat oven to 375°F. Drizzle chicken with oil, and sprinkle with salt. Place on a rack in a broiler pan rubbed with oil.
  3. Bake 35 to 40 minutes or until done, turning once halfway through baking.

Side Dish Ingredients

  • 1 (5-oz) pkg spring mix
  • 6 plums, pitted and chopped
  • 2 avocados, cut into chunks
  • 1 lime
  • ¼ cup extra virgin olive oil
  • 1 Tbsp raw honey

Side Dish Instructions

  1. Combine lettuce, plums, and avocados in a bowl.
  2. Grate zest from lime to equal ½ tsp and squeeze juice to equal 2 Tbsp juice.
  3. Whisk together oil, lime juice, zest, honey, and desired amount of salt and pepper. Pour dressing over salad; toss.
