Sheet Pan Fajitas
Jalapeño-Watermelon Salad
Ingredients
- 1¾ lb chicken breast strips (see Note)
- 2 (12-oz) pkg sliced bell pepper and onion medley
- 4 Roma tomatoes, cut lengthwise into wedges
- ¼ cup avocado oil
- 3 Tbsp fajita seasoning (or use Southwest seasoning)
- 1 head romaine lettuce, separated into leaves
- 2 limes, cut into wedges
Instructions
- Preheat oven to 425°F. Place a large rimmed baking sheet in oven while preheating.
- Toss together chicken, bell pepper medley, tomatoes, oil, and fajita seasoning in a large bowl. Carefully spread mixture in a single layer on preheated baking sheet.
- Bake 20 minutes or until chicken is done and vegetables are tender. Serve in lettuce cups with lime wedges.
Side Dish Ingredients
- 4 cups watermelon chunks
- 1 small jalapeño pepper, seeded and sliced
- 2 Tbsp extra virgin olive oil
- 2 Tbsp fresh lime juice
- 1 tsp lime zest
Side Dish Instructions
- Stir together all ingredients in a large bowl; season with salt to taste.
