Oven-Baked Meatballs in Marinara Sauce

Ingredients

  • 2 lb grass-fed ground beef
  • 1 lb ground pork
  • ½ cup finely chopped sweet onion
  • ¼ cup chopped fresh basil
  • 2 Tbsp Italian seasoning
  • 2 tsp salt
  • 1 tsp pepper
  • 1 large egg, lightly beaten
  • 2 (24-oz) jars organic marinara sauce (such as Rao's)

Instructions

  1. Preheat oven to 400°F; line a rimmed baking sheet with foil. Place a wire rack on foil. Stir together beef, pork, onion, basil, Italian seasoning, salt, and pepper in a large bowl. Stir in egg. Shape mixture into 2-inch balls; place on wire rack.
  2. Bake 20 minutes. Transfer meatballs to a large skillet; add marinara sauce, and cook over medium heat 5 minutes or until sauce is thoroughly heated and meatballs are done.

Side Dish Ingredients

  • 4 zucchini
  • 2 cloves garlic, minced
  • 2 Tbsp avocado oil

Side Dish Instructions

  1. Cut zucchini into noodles using a spiralizer or cut zucchini lengthwise into ¼-inch-thick slices. Stack 3 zucchini slices at a time, and cut lengthwise into thin strips to resemble strands of pasta.
  2. Sauté garlic and zucchini in hot oil in a large skillet over medium-high heat 2 to 3 minutes. Season with salt and pepper to taste.
