Sausage-Stuffed Zucchini Boats
Whole-Grains Pilaf
Ingredients
- 6 zucchini, halved lengthwise
- 2 Tbsp water
- 1 (8-oz) pkg sliced baby portobello mushrooms
- 1 Tbsp olive oil
- ¾ lb ground turkey sausage
- 1 cup chopped onion
- 1 (24-oz) jar roasted garlic marinara sauce
- 1 cup shredded reduced-fat Italian-blend cheese (such as Sargento)
- ½ cup panko breadcrumbs (preferably whole wheat)
Instructions
- Preheat broiler. Place half of zucchini, cut sides down, in a 13- x 9-inch baking dish; add 1 Tbsp water. Cover with plastic wrap; microwave at HIGH 5 to 6 minutes or until fork-tender. Repeat with remaining zucchini and 1 Tbsp water.
- Scoop out zucchini pulp, leaving ¼-inch-thick shells. Chop pulp.
- Meanwhile, cook mushrooms in hot oil in a large nonstick skillet over medium-high 6 to 8 minutes or until browned; remove from skillet.
- Add sausage and onion to skillet; cook 5 to 6 minutes or until sausage is browned and crumbly. Stir in mushrooms and sauce; cook 3 minutes or until thoroughly heated.
- Stir in zucchini pulp. Spoon sausage mixture into zucchini shells, and place on a large rimmed baking sheet. Sprinkle with cheese and panko; coat with cooking spray. Broil 2 to 3 minutes or until cheese is melted and panko is golden.

- ¼ tsp salt
- ⅛ tsp pepper
