Garlic Roast Beef
Mashed Potatoes and Oven-Roasted Green Beans
Ingredients
- ½ onion, sliced
- 4 cloves garlic, minced
- 1 (10.75-oz) can beef consommé
- 1¾ lb boneless chuck roast
Instructions
- Spread onion and garlic on bottom of a 4-quart slow cooker; pour consommé over.
- Season roast with salt and pepper; place in cooker.
- Cover and cook on LOW 8 hours or until very tender.
- Remove roast; slice across the grain into thin slices.
- (Reserve half of roast for Loaded Beef Nachos recipe). Serve remaining roast with onions and gravy.
Side Dish Ingredients
- ½ lb green beans, trimmed
- 1 clove garlic, thinly sliced
- 1 Tbsp olive oil
- 1 (24-oz) pkg refrigerated mashed potatoes
Side Dish Instructions
- Preheat oven to 350°F.
- Combine beans, garlic, and oil on a rimmed baking sheet.
- Bake 15 minutes or until crisp-tender. Season to taste.
- Heat potatoes according to package directions.
