Garlic Roast Beef

Mashed Potatoes and Oven-Roasted Green Beans

Ingredients

  • ½ onion, sliced
  • 4 cloves garlic, minced
  • 1 (10.75-oz) can beef consommé
  • 1¾ lb boneless chuck roast

Instructions

  1. Spread onion and garlic on bottom of a 4-quart slow cooker; pour consommé over.
  2. Season roast with salt and pepper; place in cooker.
  3. Cover and cook on LOW 8 hours or until very tender.
  4. Remove roast; slice across the grain into thin slices.
  5. (Reserve half of roast for Loaded Beef Nachos recipe). Serve remaining roast with onions and gravy.

Side Dish Ingredients

  • ½ lb green beans, trimmed
  • 1 clove garlic, thinly sliced
  • 1 Tbsp olive oil
  • 1 (24-oz) pkg refrigerated mashed potatoes

Side Dish Instructions

  1. Preheat oven to 350°F.
  2. Combine beans, garlic, and oil on a rimmed baking sheet.
  3. Bake 15 minutes or until crisp-tender. Season to taste.
  4. Heat potatoes according to package directions.
