Spicy Dijon Pork Roast

Ingredients

  • 4 lb bone-in pork shoulder roast, well trimmed
  • 1 tsp salt
  • 1 tsp pepper
  • ¼ cup Dijon mustard
  • 3 Tbsp hot sauce
  • 2 Tbsp olive oil
  • 2 tsp Italian seasoning
  • 6 cloves garlic, minced
  • 1 onion, chopped

Instructions

  1. Sprinkle pork with salt and pepper. Place in a 5- to 7-quart slow cooker.
  2. Combine mustard, hot sauce, olive oil, Italian seasoning, and garlic in a bowl. Rub mustard mixture over pork. Arrange onion around pork.
  3. Cover and cook on LOW 8 to 10 hours or until pork is tender. (Shred 3 cups pork, and reserve with 6 Tbsp cooking liquid for Pork Sandwiches recipe.) Serve remaining pork with rice and green beans.

Side Dish Ingredients

  • 1½ cups long-grain brown rice, rinsed
  • 3 Tbsp chopped fresh tarragon
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Cook rice according to package directions. Stir in tarragon and salt and pepper.
  2. Steam green beans according to package directions.
