Spicy Dijon Pork Roast
Tarragon Rice and Steamed Green Beans
Ingredients
- 4 lb bone-in pork shoulder roast, well trimmed
- 1 tsp salt
- 1 tsp pepper
- ¼ cup Dijon mustard
- 3 Tbsp hot sauce
- 2 Tbsp olive oil
- 2 tsp Italian seasoning
- 6 cloves garlic, minced
- 1 onion, chopped
Instructions
- Sprinkle pork with salt and pepper. Place in a 5- to 7-quart slow cooker.
- Combine mustard, hot sauce, olive oil, Italian seasoning, and garlic in a bowl. Rub mustard mixture over pork. Arrange onion around pork.
- Cover and cook on LOW 8 to 10 hours or until pork is tender. (Shred 3 cups pork, and reserve with 6 Tbsp cooking liquid for Pork Sandwiches recipe.) Serve remaining pork with rice and green beans.
Side Dish Ingredients
- 1½ cups long-grain brown rice, rinsed
- 3 Tbsp chopped fresh tarragon
- ¼ tsp salt
- ¼ tsp pepper
- 2 (8-oz) pkg thin green beans
Side Dish Instructions
- Cook rice according to package directions. Stir in tarragon and salt and pepper.
- Steam green beans according to package directions.
