Slow Cooker Smoky Pork
Broccoli and Carrots with Bacon
Ingredients
- 1 cup chopped onion
- 1 (14.5-oz) can low-sodium chicken broth
- 2 Tbsp smoked paprika (or use regular)
- 1 Tbsp garlic powder
- 1 Tbsp dried oregano
- 1 tsp ground cumin
- 1 tsp salt
- 1 tsp pepper
- 4 lb bone-in pork shoulder roast, well trimmed
Instructions
- Place onion and broth in a 6- to 7-quart slow cooker.
- Combine paprika, garlic powder, oregano, cumin, salt and pepper in a small bowl.
- Rub spice mixture over pork, and place in cooker.
- Cover and cook on LOW 10 hours or until pork is tender. (Shred and reserve 3 cups pork for Paleo Brunswick Stew recipe.) Serve remaining with Broccoli and Carrots with Bacon.
Side Dish Ingredients
- 6 slices nitrate-free bacon
- 1 cup chopped onion
- ½ tsp garlic salt
- ½ tsp lemon-pepper seasoning
- 2 lb broccoli crowns, cut into small florets
- 1 (16-oz) pkg carrots, cut into ½-inch-thick slices
Side Dish Instructions
- Preheat oven to 425°F.
- Cook bacon in a large skillet over medium-high heat 4 to 5 minutes or until crisp; crumble bacon, and reserve 3 Tbsp drippings.
- Cook onion, garlic salt and lemon pepper in hot drippings 3 minutes or until onion is just tender.
- Toss onion mixture with broccoli and carrots on a large rimmed baking sheet.
- Bake 20 minutes or until broccoli and carrots are tender, stirring once. Sprinkle with bacon.
