Slow Cooker Smoky Pork

Ingredients

  • 1 cup chopped onion
  • 1 (14.5-oz) can low-sodium chicken broth
  • 2 Tbsp smoked paprika (or use regular)
  • 1 Tbsp garlic powder
  • 1 Tbsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp pepper
  • 4 lb bone-in pork shoulder roast, well trimmed

Instructions

  1. Place onion and broth in a 6- to 7-quart slow cooker.
  2. Combine paprika, garlic powder, oregano, cumin, salt and pepper in a small bowl.
  3. Rub spice mixture over pork, and place in cooker.
  4. Cover and cook on LOW 10 hours or until pork is tender. (Shred and reserve 3 cups pork for Paleo Brunswick Stew recipe.) Serve remaining with Broccoli and Carrots with Bacon.

Side Dish Ingredients

  • 6 slices nitrate-free bacon
  • 1 cup chopped onion
  • ½ tsp garlic salt
  • ½ tsp lemon-pepper seasoning
  • 2 lb broccoli crowns, cut into small florets
  • 1 (16-oz) pkg carrots, cut into ½-inch-thick slices

Side Dish Instructions

  1. Preheat oven to 425°F.
  2. Cook bacon in a large skillet over medium-high heat 4 to 5 minutes or until crisp; crumble bacon, and reserve 3 Tbsp drippings.
  3. Cook onion, garlic salt and lemon pepper in hot drippings 3 minutes or until onion is just tender.
  4. Toss onion mixture with broccoli and carrots on a large rimmed baking sheet.
  5. Bake 20 minutes or until broccoli and carrots are tender, stirring once. Sprinkle with bacon.
