Beef, Broccoli, and Cabbage Bowls

Ingredients

  • 7 cups low-sodium beef broth
  • 1 onion, thinly sliced
  • Reserved cooked beef (from Ginger Beef over Soba Noodles recipe), chopped
  • 1 (12-oz) pkg broccoli florets
  • 1 (8-oz) pkg sliced baby bella mushrooms
  • 1 red bell pepper, chopped
  • 1 Tbsp coconut aminos
  • 2 tsp sesame oil
  • 1 tsp rice vinegar
  • ¼ tsp crushed red pepper
  • 1 small head napa cabbage, thinly sliced
  • 1 cup (1-inch) pieces green onions

Instructions

  1. Combine broth and onion in a large saucepan; bring to a boil. Stir in beef, broccoli, mushrooms, and bell pepper; cook 4 minutes.
  2. Stir in soy sauce, sesame oil, vinegar, and red pepper; simmer 10 minutes.
  3. Add cabbage and onions; simmer 5 minutes or until cabbage is tender.
